Makase Relaunched with Vibrant Southeast Asia Street Food-Inspired Menu
Hotel Indigo Seminyak Beach’s signature restaurant has some brand-new culinary creations, wrapped in Southeast Asia flavours…with chic presentations.
Makase’s very own Executive Chef Heri Riskiawan Efendi presents the refined version of beloved Southeast Asian cuisine in the neighborhood-style eatery. Guests are invited to savour authentic and comforting dishes originating from Malaysia, Singapore, Thailand, Vietnam, and Indonesia, following Chef Heri’s culinary adventures across the region.

Makase fuses modern elements with timeless charm in its architecture. Within its space, a neighborhood-style design with a vibrant colour scheme and tasteful decor creates an intimate ambiance for guests. The open kitchen concept lets guests observe chefs flaunting their culinary artistry.
Moreover, the layout offers cozy outdoor seating and spacious indoor options, accommodating up to 110 guests comfortably. Whether you’re seeking an intimate dinner for two or planning a special event, Makase opens its doors daily from 6.30 am to 11 pm.
Chef Heri’s top pick from the updated menu is the 400-gram Lamb Shank, inspired by his visit to Solo in Central Java, where he learned an authentic recipe from a famous local street food vendor. It features Solo-style braised lamb, sweet soy sauce, shallots, chili, and tomato, delivering an enticing aroma and rich spices. Another must-try dish is the Ayam Bakar, a 500-gram boneless baby chicken served with pumpkin shoots and chili jam.

Dedicated to sustainability and quality ingredients, Makase offers hearty dishes like Pho Bo or Tom Yam, with flavourful options such as Beef Rendang and comforting Seafood Laksa. For Thai cuisine enthusiasts, don’t miss out on the refreshing Larb Gai, a Thai-style minced chicken dish with a house-made sweet chili dipping sauce.

Chef Heri started his professional culinary journey in 2006 and has since shared his expertise with various establishments, such as W Maldives, Le Méridien Bali Jimbaran, and InterContinental Bali Resort. Additionally, he played a crucial role as a member of the pre-opening team at Salazon Bali.
Chef Heri delights in exploring different cuisines, and discovering new flavours, and has a keen taste for top-notch ingredients. He loves using his vast knowledge to create innovative dishes using local produce, and his true passion lies in crafting rich barbecue dishes. Outside the bustling kitchen, he enjoys riding motorcycles and exploring culinary adventures.
Additionally, Chef Phukvarun Watchmon (Chef Golf), the Executive Chef of Sindhorn Midtown Hotel Bangkok, part of IHG’s Vignette Collection, served as the guest chef for Makase’s highly anticipated relaunch on 26 October 2023.
Chef Golf’s culinary journey began in her youth when assisting her mother in operating a local Thai restaurant. Her menus reflect her heritage, emphasizing authentic local flavours and presenting aromatic dishes filled with a delightful mix of spices.
Until the end of the year, guests can enjoy authentic Thai cuisine at the modern restaurant, featuring Chef Golf’s favorites such as Chicken Green Curry, Spicy Prawn Soup, and Seafood Pineapple Fried Rice. Later in 2024, Makase will introduce even more regional collaborations, so you can look forward to tasting an even broader array of Asian flavours!
