Grand Hyatt Bali is pleased to announce the appointment of Devendra Datt as the resort’s new Indian Specialty Chef. With fifteen years of culinary experience, Chef Devendra will bring a fresh perspective and elevate the culinary offerings at Grand Hyatt Bali with a revamped menu that pays homage to India’s rich traditions.

Chef Devendra’s culinary journey shows the endless possibilities of chefs in India. He has held prestigious positions such as Head Chef at Time and Again, a renowned North Indian restaurant in Mumbai. He honed his skills and rose from commis II to commis chef at the esteemed Courtyard by Marriott Mumbai. Later, he took on more responsibilities as a culinary associate at the Shangri-La Hotel Bombay Convention Center.

In 2014 Chef Devendra embarked on a new adventure in Saudi Arabia where he became Chef de Party at the prestigious Hamilton House. Along his culinary journey, he made a notable stop at Island of Paradise, a Club Med resort in Bali, where he served as an Indian chef for four years. During his time there, he played a key role on the hotel’s pre-opening Indian Kitchen team, helping to recreate authentic Indian dishes.

As Indian Head Chef at Grand Hyatt Bali, Chef Devendra will infuse his decades of experience into the resort’s personalized culinary offerings. He will oversee the kitchens, including in-room dining and banquet services, with a primary focus on offering authentic Indian cuisine.
