Who, you might wonder, is the Executive Chef behind the unique culinary vibe of Hotel Indigo Bali Seminyak Beach?

That would be Heri Riskiawan Efendi- a highly experienced and inspired chef originally from Banyuwangi, East Java. A graduate of Dhyana Pura University, Heri started his career in 2006, working his way through the prestigious kitchens at the Intercontinental Jimbaran, Le Meridien Jimbaran, W Maldives, and he was a member of the pre-opening team of the exclusive Salazon Bali, before finding himself as the Executive Chef of Hotel Indigo.

Heri has always been a big fan of grilled or woodfire BBQ and Western food. His cooking style has been influenced by senior chefs who have mentored him on his way up, and he likes to draw inspiration from the many recipe books he has collected. He is in his element whenever he is cooking BBQ food, crafting rich flavours and experimenting with innovative new dishes.

Heri is also always on the look for new authentic recipes. The new menus at Makase reflect his time travelling in Southeast Asia and trying new flavours, particularly street food. His personal recommendation would be the 400gr Lamb Shank, which was inspired by his trip to Solo City in Central Java. He adapted an authentic Javanese recipe from one of the famous local street stalls which he felt needed wider recognition, creating a rich, fragrant dish to present as a signature dish at Makase.

One of Heri’s favourite things about being in the kitchen at Hotel Indigo Bali Seminyak Beach is having access to the highest quality, locally sourced ingredients so he can develop new dishes all the time, which he can share with his loved ones and his guests. Food is truly a love language if you ask Heri. In his spare time Heri enjoys riding motorbikes and of course pursuing culinary adventures.
